I love this simple blend right away in the morning for breakfast. It’s a way to get your greens in but with the sweetness of the fruit it’s perfect side to your paleo eggs.
2 C dark leafy greens. I love kale, spinach and chard
1/2 C berries and or peaches
1/2 tsp pureed fruit
1 tsp Apple Cider Vinegar
1 tsp Unrefined Virgin Coconut Oil
To Make Dressing: Blend the fruit puree or unsweetened jam with the apple cider vinegar. Spoon onto the greens/fruit. Then melt the coconut oil slightly and drizzle on top.
Add a side of scrambled eggs cooked in butter or coconut oil for a complete breakfast with protein and enough carbs to fuel your body but not overtax the adrenals.
Add chicken or fish for a lunch salad!
